Juxtaposed is Wes Pearson and Cassie Southwell’s McLaren Vale project, evolved from the former Dodgy Brothers label and built around site expression. Wait Vineyard Shiraz comes from an unirrigated vineyard with a distinctive sandy section, allowing the fruit to ripen slowly while holding freshness. Wes keeps the cellar work simple, using old oak and minimal additions.

Amaro and darker fruit. Really good, lighter to medium-bodied Shiraz. Medium-bodied and fruit-led, with enough freshness to keep it easy at the table.

Grilled steak, lamb cutlets, mushroom dishes and aged cheese.
