I. AM. 2024 Regenerative Organic Shiraz

Dark plum. Black pepper. Earthy spice.

I. AM. is Stoke Wines’ McLaren Vale project with winemakers Nick and Bec Dugmore’s push into growers who put soil health first. This Shiraz comes from Inkwell Vineyard, Australia’s first Regenerative Organic Certified site, hand-picked, destemmed and fermented on native yeast.

A portion of the fruit is picked four days early to build a traditional French pied de cuve starter, then cap-managed through fermentation and aged 6.5 months in puncheon oak, with a touch of Pinot Noir lees folded in to soften the palate. Dark plum, black pepper and earthy spice, savoury and structured.

Perfect with slow-cooked lamb shoulder, char-grilled steak or anything off the coals.
