GUM Fiano 2026

Fresh nuts. Citrus zest. Daffodil.

GUM is the project of sommelier-turned-winemaker
George McCullough, launched in 2022 and centred on Central Victorian vineyards. He works with sustainably and organically minded growers alongside his Cathedral Range estate site. This Heathcote Fiano comes from pre-Cambrian ironstone sands and is raised on lees with regular stirring for texture.

Typical Fiano: slightly nutty, with fresh nuts, citrus zest, daffodil and a little spice. Textural, with great length. This is great for Chardonnay drinkers or anyone looking for a richer style but with enough minerality to keep coming back to the glass.

Perfect with pesto pasta, roast chicken, grilled zucchini and nutty cheeses.
